The £7 is National Express's starting price for Stansted to London, not a fare to Victoria in particular; later bookings cost more.

Worth knowing
The A8 leaves Stansted every 15 to 45 minutes, 00:10 to 01:30 and 05:00 to 23:50, and nothing on it runs between 01:30 and 05:00. The 025 leaves Victoria only 16 times a day (01:30, 02:30, 03:30, 06:30, 08:00, 09:30, 10:30, 12:00, 13:30, 15:00, 16:30, 18:00, 19:00, 20:30, 22:00 and 23:59), so the wait there is 20 minutes to a little over two hours.
The A8 sets you down at the Arrivals Hall of Victoria Coach Station and the 025 leaves from the Departures Hall; allow time to walk between them.
Every 025 except the 01:30 and 02:30 goes through Heathrow before Gatwick, which is why the second coach takes up to 2 hours 45. It calls at the North Terminal before the South Terminal.
National Express advises being at the airport three hours before a flight, so do not plan a connection tighter than that by coach.
