The U2 underground stop is directly in front of the terminal. Trains run straight to Nürnberg Hauptbahnhof in about 12 minutes; the airport is the end of the line, so any train goes.
Finding the stop
Buses 30 to Erlangen and 33 to Fürth, and the NightLiner N12, leave from the bus stop on the terminal forecourt.
Tickets
Every U-Bahn station has ticket machines that take cash, EC and credit cards; the VGN and NürnbergMOBIL apps sell the same tickets. Bus drivers sell singles and day tickets. A single is valid from purchase; a 4er-Ticket must be stamped before you board.

Taxis run on Nuremberg's official meter, which may be neither undercut nor exceeded: EUR 4.90, then EUR 5.10 for the first km, EUR 2.70 a km to the fifth and EUR 2.20 after. Five or six passengers add EUR 3, seven or eight EUR 10. The Hauptbahnhof comes to about EUR 28.
